Quick Lunch: Chickpeas with Tuna Patties

My New Year Resolution for 2014 is to do more home cooking for a healthier diet (hopefully), if you have any simple to follow recipes, please share with me.

Recipe #1: Chickpeas with Tuna Patties

1 serving

Ingredients
  • 1/2 can of chickpeas
  • 1/2 can of tuna in brine
  • a handful of coriander
  • a pinch of cumin seeds (if you don't like the taste of muruku, please skip this)
  • 1 small onion
  • 1 small clove of garlic
  • 1 small chili (I used chili padi for the kick)
  • 1 tablespoon of lemon juice (I forgot to add this :( )
  • 1 tablespoon vegetable oil


















Directions
  • Finely dice the coriander, garlic, onion and smash the cumin seeds  
  • Blend the chickpeas into a paste, mix well with tuna, lemon juice and the above finely diced ingredients
  • Make it into patties
  • Pan fried the patties and we are done!
I had my patties just as it is but you can make a simple dip to go with it, just mix coriander with natural yoghurt.

Chickpeas or Garbanzo beans are considered as one of the world's healthiest food for its high fiber content.

Tuna is a lean protein with a good source of Omega 3, Selenium, Niacin and Vitamin B6 and B12
