12 muffins
Ingredients
- 1/2 cup butter (113gm)
- 2/3 cup sugar (85gm)
- 1/4 cup honey
- 2 eggs
- 1/2 teaspoon salt
- 1 1/2 cup all purpose flour (192gm)
- 3/4 cup yellow cornmeal (96gm)
- 1/2 teaspoon baking powder
- 1/2 cup milk
- 3/4 cup frozen yellow corn
Directions
- Preheat oven to 200 degree celsius
- Grease muffin pan
- Cream butter, sugar, honey egg and salt
- Add sifted flour, cornmeal and baking powder and mix well. Add milk while mixing
- Add corn to mixture and mix well
- Bake for 20 to 25 minutes or till muffins are browned
Things to Note
- Not necessary to use an electric mixer, a whisk will suffice. Lumpy batter will produce less dense muffins
- Frozen corns should be drained and access water removed or the muffins will be too moist
