Recipe #5: Kenny Rogers Inspired Corn Muffin

12 muffins

Ingredients
  • 1/2 cup butter (113gm)
  • 2/3 cup sugar (85gm)
  • 1/4 cup honey
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 1/2 cup all purpose flour (192gm)
  • 3/4 cup yellow cornmeal (96gm)
  • 1/2 teaspoon baking powder
  • 1/2 cup milk
  • 3/4 cup frozen yellow corn



Directions
  • Preheat oven to 200 degree celsius
  • Grease muffin pan
  • Cream butter, sugar, honey egg and salt
  • Add sifted flour, cornmeal and baking powder and mix well. Add milk while mixing
  • Add corn to mixture and mix well
  • Bake for 20 to 25 minutes or till muffins are browned





















Things to Note
  • Not necessary to use an electric mixer, a whisk will suffice. Lumpy batter will produce less dense muffins
  • Frozen corns should be drained and access water removed or the muffins will be too moist
